This recipe produces a cookie with a texture resembling that of angel food cake.

Mix all ingredients together and beat for about 45 minutes. Spray your pan well and fill a baking pan* with 1/4 inch of mixture. Bake at 350°F for 15-20 minutes, or until the mixture has risen and turns golden brown.
*I like to bake mine in small molds to make decorative individual servings.
